Cacao-Espresso Truffles

Truffles:
1/3 C+2T Coconut Cream
1/2T #Omghee
2t espresso grounds
8ozs Darkest Cacao Bar (72% or above)

Topping:
1t espresso grounds
2pkts Nektar crystallized honey
1/2 tsp Saigon cinnamon

1. Truffles: Bring coconut cream to a boil.
2. Lower to a simmer, add #omghee, espresso, and chocolate bar. Whisk until blended.
3. Transfer to a bowl, refrigerate for 3 hours.
4. Topping: mix ingredients until blended.
5. Take chilled truffle mix, using cookie dough scoop, make 8 equal rounded truffles, rolling in topping mixture. Chill until enjoyed.
