When I’m feeling lazy or tired, or the summer heat has drained me, I don’t want to cook much. I’m trying to get better about it, by keeping certain things on hand regularly that we fall back on. Because, let’s face it, some days you don’t plan ahead, some days you forget to thaw something, or some days it’s just too dang hot to turn on an oven.

Today was no different. I thawed an awesome cut of beef to make for dinner, but by 3pm I just didn’t have it in me to pull off what I’d planned. I did, however, have it in me to throw this together, in 5 minutes, for 3 people. It was perfect for a 100F+ degree day, and better than ordering pizza!

Paleo Charcuterie- cold cuts, dairyfree herbed cream cheese, mushrooms, figs, mustard, pickles, grapes.
