Here’s a fun breakfast alternative.
These are my Sweet & Spicy Sausage and Potato Bites, the first thing I ever made with potatoes on Whole30 back when potatoes were first allowed in the program last summer. This is from my guest post when I was featured on Whole30 Recipes back in January.
YES! Potatoes are allowed now on Whole30, and Paleo depending on your personal paleo code and activity level. It’s a great eggless breakfast idea, if you are looking for one.
How to make the sausage patties:
INGREDIENTS (Makes approx 12 patties)
1 lb local pastured seasoned pork
1/2 cup shredded unsweetened coconut
1/2 tsp dried fennel
s&p, to your liking
1/8 tsp crushed red pepper
Mix it all together thoroughly, and form into sausage patties. I cooked slowly over medium heat on a cast iron skillet until nice and brown.
This was a huge treat for my family! They were very thrilled with this and ate it all, and the sweet and salty combination of the spices and salts, with the natural sweetness of the coconut, was divine!
Served in between two fried purple potato slices, with hot sauce and cilantro.
