Eggs, I love ’em. I love ’em a lot. Poached, runny side up, over easy, fried, soft-boiled, hard boiled, blah, blah, blah, I love them. One of the reasons I love them so much is that I think of them as a rescue meal staple. It is so easy to turn a meal around by adding eggs, making it special, and easy if you use eggs. I am often not in the mood to cook at the end of the day, but eggs are fast and simple to pull off and make a lazy dinner seem more eggsellent than if you had run out and gotten take out instead. This is why I like to pack an entire shelf in my fridge full of eggs. Yes, I eat a lot of eggs.
