Tuna & Apple Salad with Fuji Apple Vinaigrette

There are an awful lot of tuna recipes here… and here is one more. It certainly won’t be the last. A little known fact about me, the raging carnivore: I used to be a pescatarian (I only ate fish as my source of animal protein). People, I love me some fish, in almost any form. And the reason I love tuna, is because when I am feeling particularly lazy, I can throw something awesome together with tuna, like this bad boy salad, in less than 20 minutes, and eat like a queen.

I was out of town at a family member’s house helping after she had surgery and this is what I came up with after digging through her fridge and cupboards. That is how easy this is to prepare. Just some hardboiled eggs, fruit, veggies, and tuna, and one great meal.

Tuna & Apple Salad with Fuji Apple Vinaigrette (Serves 4-6) 

Tuna & Apple Salad: 

2 cans of wild caught albacore tuna in water (I prefer Safecatch Foods, see above)

1 celery stalk, diced

3 hardboiled eggs, peeled and chopped

1 Fuji apple. sliced thin

2 generous tbsp Primal Kitchen Mayo 

1 heaping tbsp dijon mustard

1 dill pickle, diced small

1 small can of sliced olives

1 tomato, chopped

1 large container container organic mixed salad greens (lettuce, kale, spinach, etc)

1. Mix together tuna, celery, egg, apple, mayo, mustard, pickle, until all incorporated.

2. Divide lettuce between number of plates serving. Top with tuna mixture, dress with tomatoes, olives. Add vinaigrette to the top. (See below)

Fuji Apple Vinaigrette (serves 4-6, generously)

1 Fuji apple, chopped

1 c EVOO

1 c white balsamic

2 tbsp dijon mustard

1 tbsp lemon juice

generous pinch salt & pepper

small pinch of coconut nectar

HOW TO: Add all ingredients to a wide-mouth mason jar. Use an immersion blender to blend until liquid. Serve and eat on EVERYTHING.
