Tuna & Apple Salad with Fuji Apple Vinaigrette

There are an awful lot of tuna recipes here… and here is one more. It certainly won’t be the last. A little known fact about me, the raging carnivore: I used to be a pescatarian (I only ate fish as my source of animal protein). People, I love me some fish, in almost any form. And the reason I love tuna, is because when I am feeling particularly lazy, I can throw something awesome together with tuna, like this bad boy salad, in less than 20 minutes, and eat like a queen.

My favorite brand of albacore tuna is Safecatch Foods Albacore. 100% of the fish are tested for mercury and their safety standards are top notch. You can read more about Safecatch on this post about another tuna salad (I know, that’s a lot of tuna. I told you): Tuna Salad on Microgreens.

I was out of town at a family member’s house helping after she had surgery and this is what I came up with after digging through her fridge and cupboards. That is how easy this is to prepare. Just some hardboiled eggs, fruit, veggies, and tuna, and one great meal.

*Behind the scenes: I was photographing the plates and this cat obviously approved of my creation. And yes, that is how I photograph. Odd backgrounds, unexpected props. Sorry to burst the fancy photography bubble! LOL
