Don’t worry about those bacon bits, they’re real bacon, not those processed, brown, soy skiblets you buy in the spice aisle of the grocery store. You want bacon bits? Dude, make your own!
This was our lunch the other day and it was fast, easy, delicious, let alone so very filling. We ate them outside to enjoy this perfect weather we’ve been having, because soon it’ll be raging heat we can’t stand.
BBLT Salad (serves 2)
6 pieces of uncooked bacon, cut into small bits with knife or scissor
2 c chopped lettuce (I used romaine)
2 Roma tomatoes, chopped
2 green onions, diced
Papaya Poppyseed Dressing
How To: Bacon Bits
Heat small cast iron over medium-high heat. Add bacon pieces, top with bacon press. Cook about 3 minutes. Using hot pad, remove bacon press, stir bacon. Place bacon press back over bacon, continue process until bacon cooked to desired doneness. We prefer very crisp bacon, so we cooked it about 10 minutes, alternating bacon press and stirring.
Salad: divide all ingredients even between two bowls, combining lettuce, bacon, tomato, onion, and top with salad dressing.
