I absolutely love tuna. I have a million and one ways that I make it, but in all the years I have been married, my husband has never once eaten it. He says he doesn’t like tuna. Well, I made this for myself on a Saturday afternoon, and then he asked me to make him one, too. And I jumped at it, because after 15 years of me making tuna in those million ways, and him never, ever eating it, I was not about to let this moment pass me by.
Before I hand off the recipe, I want to let you know that I eat tuna a lot because it is so easy to throw together in a pinch. This recipe is no exception. A few stock ingredients and you have a masterpiece to the eye and tastebud. On this day, it was Trader Joe’s and Primal Kitchen Foods to the rescue, in addition to Safecatch.

Microgreens and Tuna Salad with Safecatch Foods Albacore (Serves 2)
2 cups Trader Joe’s Microgreens
5 oz. can of Safecatch Foods Albacore Tuna
1 TBSP Trader Joe’s Artichoke Garlic Aioli
2 TBSP Primal Kitchen Foods Paleo mayo
1 tsp dijon mustard
3 hardboiled eggs, diced
1 tsp capers
3 diced mini cornichons
2 TBSP Trader Joe’s Healthy 8 Veggie Mix
On the side:
Addt’l 2 TBSP Trader Joe’s Artichoke Garlic Aioli for dressing
Addt’l microgreens for topping
1. Set microgreens aside, separated onto two different plates.
2. In a medium mixing bowl, mix tuna, aioli, mayo, mustard, egg, capers, cornichons, and Healthy 8 veggie mix. Make sure that all sauces are incorporated into the mix.
3. Scoop out even portions using large cookie or ice cream scoop into center of microgreens. Top with the set aside portioned aioli, top with extra greens.
And guess what? Hubby loved it. So there you have it, after 15 years, Safecatch was the way to his newly minted tuna loving heart.
