PALEO AND WHOLE 30 STUFFED BELL PEPPERS!
(This was a quick prep lunch for two people, not a full batch for my family. If you are making it for more, adjust the recipe accordingly.) It’s part of my blog about One Recipe: 3 Different Paleo Meals.
WHAT YOU NEED:
4 colored bell peppers
Eggs* (one for each stuffed pepper) Optional
THE METHOD (PREHEAT OVEN TO 350)
Boil a pot of water. Remove tops of bells, and deseed. Place the bells in the water and blanch for 5-6 minutes, just barely tender, not falling apart. Remove from water and drain.
