Taco Stuffed and Roasted Tomatoes

Tomatohmygawsh this was good! I had a ton of tomatoes I had no idea what to do with and it was Taco Tuesday. Now, if your kids have watched The Lego Movie as many times and my kids have, you may have been wrangled a long time ago into a forced Taco Tuesday routine, like i have. It’s actually been kind of nice, because here I am in a way meal planning on routine, which is new for me. Though we don’t necessarily eat tacos the way you’re used to thinking of them, we do eat tacoishly. It’s a word. It really is.

So I took my Ridiculously Easy Taco Meat, jazzed it up a bit with spices and peppers, stuffed it into extra large cored tomatoes, and roasted them on the BBQ on cast iron skillets. I’m not even going to bore you with a recipe, because it is not necessary. Make the meat, stuff the tomatoes, roast in the grill on 400 degrees, for about 6-8 minutes.

I served them topped with guacamole, cilantro, and chilled spicy shrimp! The side dish was peppers stuffed with shrimp guacamole, topped with more shrimp.
