Dessert- Paleo Molten Lava Mug Cake

I think about food a lot, and I think about chocolate even more. You may notice that I don’t make a lot of Paleo treats, but on a rare occasion I do make a great Mug Cake. This weekend I was dreaming about my Dark Chocolate Mug Cake and my Lava Mug Cake and thinking about combining them differently.

The thing I love about mug cakes is that they are so easy. I have called them Minute Cakes before, also Baby Cakes,  because they take mere minutes to make. Who doesn’t love a cake in less than 2 minutes? I DO! And so does my family. I don’t buy dessert anymore and it has taken me a few years to convince my family that they do not need dessert every night. But on the occasion that they do ask, this is a fast and easy way to make their dessert dreams come true.

Dark Chocolate Molten Lava Cake (makes one, convert accordingly)

Cake Ingredients
1 heaping tbsp almond flour
1 heaping tbsp unsweetened cocoa powder
1 tbsp coconut milk (Always buy the best quality and never LITE)
½ tbsp unsweetened applesauce
1 egg
1 tsp vanilla extract (I make it homemade)
1 tbsp unsweetened coconut flakes


1/4c FULL FAT coconut milk for topping

Lava Ingredients

1/4c dark chocolate chips (or chopped dark cacao bar)

You Will Need

One good size coffee mug, coconut oil for greasing

How To
Grease coffee mug. Mix all cake ingredients together in a bowl or measuring cup. Pour half into the mug, add the chocolate chips, then add the rest of the cake mixture. Microwave for 1-1.5 minutes. Flip upside down to serve, or eat right out of the mug!

I serve hot, topped with coconut milk and more coconut flakes! You could add nuts, chocolate chips, or my Paleo Magic Shell. For this version, I topped it with a drizzle of raw honey. Cut open to enjoy the lava! Eat and enjoy, and then make another.
