I made green cauli rice with…broccoflower, pasilla, cilantro, jalapeño, garlic and veggie broth.
A great alternative to rice and more exciting than bland cauli rice. Add a little spice to your rice!
What You Need
1 head of broccoflower
1 de-seeded jalapeño
1/2 bunch of cilantro
1tsp crushed garlic
Juice of 1 lime
1/2 c veggie broth
In a large skillet, heat ghee over medium-high heat. Using your food processor cheese grating disc, add broccoflower, pasilla, jalapeño, cilantro and shred. When pan is good and HOT, add veggie mix and sauté for 5 minutes. Add garlic, lime juice, and veggie broth, stir together, add lid and simmer for 20 minutes.
We used it with our burger bowls!
And I put it in my hubby’s lunchbox today!
