Whole 30- Iced Bulletproof “Cafe Au Lait”

Don’t be confused by this. It sounds different from what it is, but there’s no dairy in there, let alone no coconut or almond milk, and the ingredients list is identical to Bulletproof Coffee, nothing else added, except ice. To make this Whole 30 Compliant, I used ghee instead of grass-fed butter today. The genius to this lies in the presentation, and the order in which its made. Like I have said in other posts, it’s all about combining food for me, not necessarily in recreating something or redoing it. I took Bulletproof Coffee and made it look like a drink I haven’t had in over 2 years, and it really just was a thrill to see the prettiness, because sometimes that is all I need. I do enjoy really beautiful food, but a gorgeous coffee puts me over the moon.

I present to you the Iced Bulletproof Cafe Au Lait, named merely for its appearance and nothing more. Here is what a real Au Lait looks like.

OK, let’s talk SWYPO, for those of you on Whole 30 this could be an issue for you. A year ago, on my first Whole 30 I would have hesitated at this because I had a coffee “issue.” Now, a year later, I no longer feel this is a problem for me, and making a drink with compliant ingredients, but a different look, is just not something I think is wrong.

Iced Bulletproof Cafe Au Lait (Serves 2)

Follow this recipe for Bulletproof Coffee found on my friend’s site: Butter In My Coffee! (Whole 30ers, you MUST use ghee instead of butter!)

Brew an additional 2 cups of coffee, leave them black.



Take two large clear glasses (I use tall skinny mason jars 20 ozs+), fill to the top with ice. Take the black coffee and fill up each cup halfway, not more, with just the black coffee. Now take the bulletproof coffee and slowly pour over the top of the ice. Watch and admire as it swirls and gently blends in. You can leave it separated and enjoy the slight taste difference between the layers of black coffee and the Bulletproof, or you can mix it together. Nothing crazy or hard here, just an idea to make something pretty. Don’t forget to take a picture! Food tastes better when you photograph it!

    Wake up to this tomorrow, a new twist on an old idea. The ingredients list will surprise you as much as the simplify will. Though it appears to be a Cafe au lait, it’s nothing more than Bulletproof coffee over ice. Sometimes rethinking an idea, rather than
    redoing it, is the best illusion of all.
