Ridiculously Easy Paleo Taco Meat!

I use this to make SO many things. Recently, I made one large batch and used it for three days in a row, you can find those recipes here: One Recipe, 3 Paleo Dishes, Cabbage Wrapped Tacos, Paleo Stuffed Mushrooms, and Paleo Stuffed Peppers.

MEAT MIXTURE

1 lb pastured pork sausage (I used bulk sausage from Page River Bottom Farm CSA in Reedley, Ca)

1 lb grass-fed beef (I use Springville Ranch from Springville, Ca, at my local Visalia Farmers Market)

Veggie Mix using any assortment of veggies you have on hand, or desire

This is beyond easy. First I recommend making a version of my Veggie Mix. I get a lot of my veggies from a local Central California CSA from Family Farm Fresh! For this particular recipe, I used 1/4 purple cabbage, 5 mini bell peppers, 1/2 c. cilantro, 1/2 onion, and 5 chives. Just pulse and it’s ready to go! Now set it aside and use it in the next step.

THE METHOD

This is pretty simple. Sautee the two meats together until no longer pink, sprinkle with desired seasonings (I used garlic salt, pepper, and crushed red peppers). Add in veggies, and sautee until all cooked completely. That’s your meat base for these three recipes, which made for amazingly simple lunches and two fast dinners.
