Plantain Chips!

These are simple and easy, and a great addition to any nacho bar. It’s my personal favorite.

INGREDIENTS

1 Plantain

Coconut oil

Various spices (I love cayenne and cracked black pepper, a little crushed red pepper)

THE METHOD (preheat oven to 400)

Slice your plantain thinly (I use an egg slicer), toss in coconut oil and spices. Put on parchment, silicone or Silpat. Bake for 20 minutes, turn over, cook for 20-25 more minutes.

  1. I’m so glad you posted this… I was buying plantain chips from Trader Joe’s a few months ago but I eat them so fast, I found myself wanting to go buy more every week or so. These would be so much easier and cheaper to make. Yum!! Think they’d be good with some cayenne pepper on them?
