Espresso-Dark Cacao-Coconut-Vanilla-Almond Flour Cookies!

Simple Almond Flour Chocolate Chip Cookies
Prep time: 10 minutes
Cook time: 12 minutes
Ingredients(Makes about 24 cookies):
3 cups almond flour or almond meal
1/2 cup ghee, room temperature (I use http://www.OMGhee.com) (You can use butter instead)
1/4 cup Organic coconut nectar (I have used unsweetened applesauce before. I love to bake with Organic GoGoSqueez)
2 organic eggs
1/4 teaspoon salt
1/2 teaspoon vanilla extract (I make mine homemade) (use more if you love a strong flavor and if you are using less sugar)
1/2 teaspoon baking soda
1/2 cup chocolate chips
1/4 cup chopped nuts(optional) (I prefer pecans that have been run through a food processor until fine)
1/2 teaspoon espresso or coffee
1/2 cup unsweetened flaked coconut (I prefer Bob’s Red Mill) (optional)
Preheat your oven to 375 degrees.
Throw it all in a bowl. No method. Just dump it in a bowl. I’ve been baking a long time, experimented a lot of different ways. No method works best for me. So I’m a dumper. I’m “Baking Bad.”
Roll the dough into 1-inch balls and press them down gently onto a non-stick baking surface.
Bake for 15-17 minutes until the cookies rise and the edges have browned.
Remove the cookies from the oven and let them cool before moving. Store at room temperature in a sealed container.
